It all started thanks to a collaboration with the University of Palermo and the agronomists of the Codifas project for the creation of urban gardens. Together with the agronomists of the farm "Coltiviamo Tradizioni,” we started the new Costanza gardens in the Ciaculli area. We now have two hectares of land cultivated producing vegetables grown according to bioethical agriculture principles with careful use of non-chemically aggressive products.
Cultivating and telling the story of the land, always offering the freshest and truly locally grown vegetables, means replanting most of the seeds obtained from our vegetables, so as to perpetuate a sustainable cycle. Zucchini, squash, tomatoes, but also basil and various wild herbs grown in our garden become protagonists of our appetizers, main courses, and gourmet pizzas. We’ve dedicated a space in our restaurant for the creation of a sample garden with the help of our agronomists in order to allow guests to participate in the various initiatives we organize throughout the year. In doing so, we hope to raise as much awareness as possible in the community about agricultural and environmental stewardship.
